Instructions:
1. Heat the oil in a large saucepan over medium heat. Add the onion, garlic, and bell pepper, and cook until the vegetables are tender, about 5 minutes.
2. Add the chili powder, cumin, smoked paprika, oregano, salt, and black pepper, and cook for 1 minute.
3. Add the black beans, kidney beans, corn, vegetable broth, diced tomatoes with their juice, green chilies, and cilantro. Bring to a simmer and cook for 10 minutes.
4. Serve with shredded cheese and sour cream or pack in your thermal bento lunch box!
